The longest-running is Piero’s on Convention Center Drive, which Freddie Glusman opened in 1982; its dining room was a filming location for Martin Scorsese’s "Casino," and in 2025 it was sold to Stephen Siegel’s Amazing Brands, which has kept the menu largely as it was. Casa Di Amore, on East Tropicana a few miles east of the Strip, promises "Vegas the way it used to be" and plays the part, with jazz and standards from a small stage every night and a free shuttle from your hotel if you call ahead; veal parmigiana is one of the house favorites, next to the osso buco and the chicken marsala. D’Agostino’s Trattoria, off the Strip, is a family place run by husband-and-wife chefs Dan and Brandi Thompson, who recently expanded and reopened a dining room that had kept turning people away.

On the Strip, RPM Italian sits at street level in the Forum Shops at Caesars Palace. It’s a partnership between Lettuce Entertain You and TV couple Giuliana and Bill Rancic, it opened in 2022 in the former Slanted Door space, and it’s built around more than a dozen pastas made in-house every day. Over at Aria, the Proper Eats food hall has a counter from Parm, the Major Food Group spot that started in Manhattan’s Little Italy in 2011; the Aria Parm, which opened in 2024, was the brand’s first location outside the East Coast.
